Make your iftar more delicious with Balochi Namkeen Sajji

Sajji is the fundamentally Balochi dish which is famous not only among Baloch people but it’s also getting acclaimed across Pakistan.

Sajji consists of whole lamb or chicken, in skewers (fat and meat intact), marinated only in salt, sometimes covered with green papaya paste, stuffed with rice, then roasted over coals.

It is served with a special bread “Kaak”, “roti” or “naan”, which is baked in an oven, wrapped around a stone “tandoor”.

Sajji is available in all regions of Pakistan, this is why regional varieties are found with subtle differences. Urban centres of Karachi, Islamabad or Lahore use chicken instead of lamb.

Here is the recipe of traditional Namkeen Sajji that you must try this Ramazan.

Ingredients:

Mutton leg 1
Papaya paste 4 tsp
Salt to taste
Ginger garlic paste 2 tsp
Fat 100 gm
White pepper 2 tsp
Crushed black pepper 2 tsp
Green chilies paste 1 tsp

Method:

1. Mark cut on mutton leg, spread fat, marinate with salt, papaya paste, ginger garlic paste, white pepper, black pepper and green chilies paste and keep in fridge.

2. Now bake in oven on 180 degrees C for 1 hour.

3. Then garnish with lemon and onion and serve hot. – Samaa
