A toothsome recipe: MASALA FRIED CHICKEN

Try this exclusive Spicy Fried Chicken recipe, and forget all the blend fried chickens that only have taste on surface level.

Ingredients

DRY SPICE MIX
    • 11-13 black peppercorns
    • 3 cloves
    • Seeds of 3 large cardamons
    • 3 tablespoons white cumin
    • 5-7 red chilli corns
    • 1 tablespoon coriander seeds
    • 1 teaspoon ginger powder
    • 1 teaspoon khataii powder
    • 1 teaspoon black salt
    • 1/2 teaspoon salt
Dry roast all the spices except the powders and blend to fine consistency . Add in the powders.
    • 1 kg chicken pieces. Apply deep cuts half way through all pieces.
    • 1-1/2 cups yogurt
    • 3 teaspoons crushed garlic
    • 1 tablespoon lemon juice
    • 1 teaspoon garam masala powder
    • Salt to taste
    • Oil to sauté .
COATING TO FRY
  • 2 cups flour
  • 1/4 cup cornflour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chaat masala powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1 teaspoon paprika

Instructions

  1. Mix half the dry masala with a little lemon juice and apply in the cuts of chicken pieces.
  2. Mix remaining ingredients in yogurt and marinate chicken at least overnight.
  3. Heat a little oil in a pan and sear the marinated chicken till half done and water dries a bit .
  4. Coat each seared chicken piece in seasoned flour and deep fry.
