Ramzan Recipe: Peri Bites

Peri Bites

Ingredients:

– 20 green chilies
– Bread crumbs (as required)
– Oil for deep frying

For Filling:

– 4 tablespoon heaped mayonnaise
– 6 keri cheese cubes
– ½ teaspoon crushed pepper sieved
– ½ teaspoon lemon salt
– 1 tablespoon vinegar
– 2 chicken breast (cut into strips)
– ½ teaspoon salt
– ½ teaspoon garlic paste
– ¼ teaspoon paprika
– ½ teaspoon black pepper
– 1 tablespoon peri peri sauce
– 1 tablespoon lemon juice
– 1 tablespoon soya sauce
– 1 tablespoon vinegar

For Batter:

– 4 tablespoon heaped flour
– 3 tablespoon heaped corn flour
– 3 tablespoon heaped rice flour
– ¼ teaspoon salt
– 1 egg
– Chilled milk

Method:

– Mix all batter ingredients in a bowl to make the batter.
– Marinate chicken with salt, garlic paste, paprika, black pepper, peri peri sauce, lemon    juice, soya sauce and vinegar for the chicken.
– Grill chicken breast in 2 tablespoon oil.
– Slit the green chilies and remove the seeds.
– Mix all the ingredients together including grilled chicken in a bowl for filling.
– Fill 1 teaspoon into each green chili.
– Dip in prepared batter, roll twice in bread crumbs.
– Chill for 1 hour and deep fry till light golden.
